Pretty sure this has been the longest three weeks of my life! Has it really only been 3 weeks?? Anyway, recovered from that ‘slip up’ after about 7 days. But my stomach has not returned to flatness. I will explain my theory on that. Being denied most appetizing food, and eating so much fresh healthy stuff has made me feel the need to compensate for my suffering by indulging excessively in the naughty things I am allowed to have. I’m often eating an entire 250g block of dark chocolate a day now. And a can of energy drink every day is also vital. Any sugar I can lay my hands on basically, leaps down my gullet. This is a very unhealthy way to deal with a gluten free diet and I don’t recommend it. I no longer have ANY faintness which is great and probably down to all the carbs I’m now obsessed with, like rice and potatoes. But I still get headaches and often feel very sluggish and gross inside and find myself thinking…but why? I didn’t eat any gluten.. And then as I slunk into my desk chair and brush away the numerous cans of energy drinks and chocolate bar wrappers I’m suddenly reminded that no amount of gluten dodging will stop excessive indulgence in sugary crap from making you feel revolting. So…watch out for that one. I started eating this stuff to comfort me as I adjusted to the change, but didn’t take into account the addictive and damaging qualities of these ‘foods’. Determined to lessen my sugar intake. Two high points!! Prepared myself a meal the other night of gluten free angel burgers with seared mushrooms and salad and SLAP MY FLAPS it was good!! Actually amazing, I couldn’t believe how insanely delicious those burgers were, regardless of their glutenlessness, and how fab I felt after preparing an actual (sort of) meal for myself. Second high point, found a gluten free cereal that tastes good. After much money wasted, zomg ‘Thank Goodness’ it’s called, I think. Doesn’t taste of cardboard at all! I had some with lactose free milk this morning and made believe I was a normal person. Om to the motherflippin Nom. Also, Salmon is my new best friend.
